Thankful on Friday

It is very cold outside, my legs are sore and my brain is ready for weekend.  But before I get too far ahead of myself…  I have much to thankful for.

  • I am grateful for sore legs and muscles that are getting stronger and ready to be used, to let me train for a race that is only 6.5 weeks away
  • I am grateful that spring actually is only six weeks away – seriously, very thankful for that one.
  • I am thankful for the chance to cook for the people I love and try new recipes and flavors with abandon
  • Also thankful when we are able to save a little bit of leftovers for lunch!
  • I am thankful for the quiet times in an otherwise very busy week.

I hope you have much to be thankful for at the end of this week, and even more than that have a moment to think about it and celebrate it.

Fashion Week – Day 1

I am very excited about this week’s fashion week.  It’s a funny thing to be looking at fall clothes when it is still so cold out that I get angry when I receive emails about raffia and cork espadrilles.  But in any case, fall runways are glamorous, saturated with warm colors, and so far, so good.

New York Fashion Week started yesterday with the following designers: Lyn Devon, Nicholas K, Steven Alan, Porter Grey, Christopher Raeburn for Victorinox, BCBG Max Azria, Richard Chai LOVE, Vena Cava, Duckie Browne, Jenni Kayne, Whit, Wes Gordon, Luca Luca, Mara Hoffman, Marlon Gobel, Tadashi Shoji, Hyden Yoo, Rachel Comey, the Vessel. by lois, Alisha Trimble, Wayne, Dominic Louis, Kate Ermilio, Christian Siriano, Irina Shabayeva and Tim Hamilton.

Dressing for Fashion Week – Wishful Thinking

Today is the first day of New York Fashion Week, and no I am not going.  However that doesn’t mean I can’t pretend shop for a pretend trip to see next Fall’s fashion line up.  The positive side of not going, no packing and no blisters from running around “between the tents” <—- that, my friends, is silver lining.

Anyway, I have traveled for fashion related work to New York before, and so I thought about what made those previous packings successful when making this wishful suitcase.  New York, for as fashionable as it is, is also a really functional city.  It cannot be neglected that you are on your feet and in and out doors all day long.
Day 1:
Day 2:
Day 3:
Day 4:
The only thing you can’t forget is cab fare, some granola bars (no, you really will never get a chance to eat), camera and iPhone.
I’ll be posting my favorites from the runways.  See what I loved last Fall and Spring, too!

Inspiration for a Beachy Keen Wedding

I spotted this dress by Milly a few weeks ago.

I loved it.  I love the classic shape, the neckline, the full skirt, the playful pop of color and how it just screams, to me at least, “Summertime!”

It is still too cold to dress in a dress this cute, but inspiration knows no season.

I thought sand, cold beers, bright flowers, knot details to “tie-the-knot” with, sweet starfish, birchwood ceremony space, and heartfelt details.

P.s. you know I am a sucker for all things “cute food” so I could not resist the idea of the mini caviar bites or the packaged s’mores.

What is inspiring you this Wednesday?

Grilled Eggplant Pesto Parmigiana

Sometimes I realize that the recipe featured here require a mixer, or an immersion blender, and for as much as I try to simplify recipes by using simple tools, it can become intimidating if your kitchen equipment is pieced together with hand-me-downs and college left overs.

This recipe requires not much more than George Foreman grill, the staple of every college “registry”, and it looks and tastes a bit more sophisticated than college.

Grilled Eggplant Pesto Parmigiana
Ingredients
1 large Italian eggplant
Pesto Sauce (either premade, or homemade – do it!  It is soo easy)
Grated Parmigiana cheese
Marinara sauce
Salt and Pepper

Preheat oven to 400 degrees.  On a cutting board slice the eggplant into 1/2″ coins.  Sprinkle generously with Kosher salt.  Salting the eggplant adds flavor and it also helps the eggplant to “sweat” out some of it’s moisture.

In a small bowl prepare the pesto sauce, come on, I know you went homemade.  Another even lower calorie option that is strong on flavor is crushed basil, garlic and olive oil – I recommend the frozen basil and garlic cubes at Trader Joe’s.
Lay the eggplant coins out on the grill and cook for 3-4 minutes or until golden brown grill marks appear and then rotate for a beautiful cross pattern.
Lay all of the grilled eggplant slices on a cookie sheet and spread each slice with a 1/2 teaspoon of your spread.  (If you’re  not into pesto, or garlic, or basil, or whatever, a tapenade would be amazing, or just your basic marinara sauce).  Sprinkle with the grated parmigiana cheese and bake for 10 – 15 minutes or until the cheese is a little bit melted.
If you can help it, arrange the grilled eggplant slices on a plate and serve with fresh sauce.  If you can’t help it, try not to burn your fingers as you eat them right from the pan.  We ate them both ways in my house, and they taste just as good with or without the fancy presentation!

This makes for a healthy, affordable, and really satisfying dinner or appetizer for a crowd.  Buon Appetito!

The Best of the Super Bowl

Let me put on my trained marketer’s hat.  Okay, all better.  There are a few key components to what makes a great Super Bowl commercial – and no it is not the suggestive lines of Danica Patrick for GoDaddy.com – they are nostalgia, emotion, and some tasteful humor.

Let’s knock out the bad and the ugly right away:

I didn’t like last year’s “Beat up Betty White” Snickers commercial and I liked this one even less.
I’m sure this will be high on the list of the funny commercials, but to me it was just ick…

I am not sure who Pepsi Zero intended for the audience to be for this commercial: normal sized women who beat up their spouses, or men who get bullied?  Certainly not young runners…

Weird.  A commercial about Eminem not doing a commercial for Brisk Ice Tea.  Super Weird.

The good.
Too funny.  You rarely see a tire commercial not capitalize on safety and often the fear factor.  This was a great twist – laughed out loud.
Chrysler and Eminem.  This commercial wasn’t perfect but great play on nostalgia and the strength of a city.
Points for nostalgia and seeing Alf, Marcia Brady and the Fonz all in one commercial.  Well done, NFL.
The favorite.
My nephew has this same Darth Vader costume.  The kid is adorable.  The commercial is awesome.
So, this was technically an intro to the game, but in terms of nostalgia and kind of choking me up “The Journey” voiced by Michael Douglas, big win.

Pre-Game Snacks

I really do love football, but this weekend’s “big game” is not really luring me in.  I am not into the teams, and I’m not into the location being a snowy Dallas…

In any case, I am into making food for the “big game”.  Did you know that only NFL and the network broadcasting the game are allowed to use the term Super Bowl in a marketing context… little known fact!

If I was having a party for the Big Game I would serve up some of these healthy favorites!
Candied Pecans!
Stuffed Mushrooms!
Sweet Potato Chips and Spicy Arugula Pesto
For more inspiration and to honor the teams playing, The Greenbay Packers and The Pittsburgh Steelers, how about these recipes:

Roasted Cauliflower and Lentil Salad

Between all of the baking I really try to make our dinners filled with an abundance of seasonal vegetables and big bold flavors.  Last week it was all about cauliflower.  Roasted, delicious cauliflower.  This very easy recipe was a snap for a weeknight dinner entree, side or weekend lunch.  It was divine – which is saying a lot for a veggie.

Roasted Cauliflower and Lentil Salad
Ingredients
One Head of Cauliflower
1/2 Vidalia Onion
1 cup of cooked lentils
1/4 cup raisins
2 tbsp Extra Virgin Olive Oil
1 tbsp White Wine Vinegar
1 teaspoon Curry Powder
1/2 teaspoon Paprika
Salt and Pepper to taste
Oven at 400 degrees
Instead of cutting the cauliflower into little trees, cut the head into slices across the sphere.
In a small glass whisk the oil and vinegar and add the curry and paprika, salt and pepper.  The “dressing” now has a burnt orange color and fragrant scent.

I dipped the head of each cauliflower slice into the dressing and laid them all out on a covered cookie sheet.  With the remaining dressing, reserve about 1 tablespoon and drizzle the excess over the cauliflower.  Bake in over for 35 minutes.
With 10 minutes left on the cauliflower timer slice the onion and throw all of the onion slices into the remaining dressing.  In a non-stick pan over medium heat, cook the dressed onions until they are nearly translucent.  Add the pre-cooked lentils (I always use pre-steamed lentils from Trader Joe’s/Whole Foods/Wegman’s) and the raisins and allow the flavors to integrate completely.
When the cauliflower has fully cooked the dressed spots will be sweetly caramelized and the heads will be browned (and extra delicious)!

Add the cauliflower to the pan with the onion, lentils and raisins and let all of those flavors dance together and serve.  That is a delicious bowl of winter.

SAG Awards Red Carpet for Less

I mentioned that I thought the SAG Awards, in terms of grandness of attire, is sort of like High School Homecoming.  That is said with no disrespect to the Homecoming Queen – it’s just that the Homecoming Queen is not a bride on her wedding day, and so the SAG Awards is not the Oscars.

Anyway, because it’s like the little sister there is a sense of attainability.  Let’s explore, shall we?

I raved about Sarah Hyland’s youthful twist on orange (cute pun!) and the strapless gown from Nicole Miller does the trick for $355

Loved Natalie’s chic mom-to-be white gown.  This look is easily recreated with the Vanilla Strapless Gown from Laundry by Shelli Segal and the addition of some sparkly pins and brooches.

Lea Michelle and Tina Fey’s straight from the runway Oscar de la Renta were a little difficult to recreate on a budget but I think we’re pretty close with a gold infused Sue Wong gown ($488) and the Nika gown (for a budget busting $788).

My favorite, in the category of “I would rock this anytime” was Julie Bowen’s pantsuit jumper.  She admitted it was risky, but she neglected to mention it would be a cinch to recreate.  Halter jumpsuit from TopShop ($90) and sparkly pins and you’re red carpet, or disco ready.

The Age of Aquarius

Today is Mark’s birthday.  I talk a lot about the food Mark and I make (and eat), the places we go, and the things we do.  But that probably doesn’t give you a full picture of who this guy, the other half of The Daily Batch, is.
It is hard to capture him in words, but I will try:
He is purposeful, he is an adventurer, he believes in this Universe, and more importantly he believes in himself.  He strives to challenge himself, and doesn’t shy away from challenging other people.  He is proud but doesn’t take himself too seriously.  He is in a constant state of forward motion and forward thinking, new learning, and understanding.  He is loving, and kind.  He is a traveler. He is 30,000 feet off the ground, and yet he is always grounded.  He is compassionate and graceful.  He has swagger, and electricity.  He is a Cowboy. He is an Aquarius.  He is the kind of person you’d choose to get stuck in an elevator, on top of a mountain, or in a foreign land with.  He is my best friend.
Happy Birthday, Mark, I can’t wait to see how great you make this year.  I love you.
